We make Niboshi by using local sardinhas from the scratch, and mix with our special Kombu dashi for the soup.

Niboshi is dried Japanese anchovies. The bold, fishy flavor with a strong aroma is one of the vital Umami contributors to dashi broth.

They are also known for their Omega-3 Fatty Acids and other health benefits such as calcium and protein.

Our Story

1955

Our journey began

Since 1955, Udon Grandpa has been a family-run noodle-making business in a small town in Hokkaido, passed down through generations. Along with techniques and experience, it has preserved a way of life rooted in traditional Japanese culture.

Building on this legacy, one of the third-generation grandchildren launched a new project in Madeira in September 2023—shaped by growing up in Japan and later experiencing the world through a global lens. At the same time, another grandchild continues to work alongside the second generation at the family noodle factory in Japan, ensuring the tradition remains alive at its source.

The founder believed deeply that noodles have the power to nourish both the body and the heart. He dedicated his life to creating original Japanese noodles, guided by this belief.

There is a small but meaningful story from the very beginning. The first time he made udon, his wife and six children gathered around, watching with excitement. Suddenly, he exclaimed, "Oh my! I forgot to add salt!" That humble moment marked the start of everything.

  5. Accessible Japanese Home Cuisine – Providing high-quality home-style Japanese dishes in a style similar to kappo cuisine allows us to reach a broader audience.
  6. Balancing Quality and Accessibility – While traditional kappo restaurants in Japan are expensive and exclusive, we want to offer authentic Japanese dishes at a fair price so that more people can experience them without compromising quality or the brand's value.

By addressing these points, Madeira was chosen as the ideal market to create a restaurant inspired by "a kappo-style inn in the Japanese countryside," combining noodle-making and authentic Japanese home-style cooking. We decided to grow gradually, following the market trends and proceeding step by step—baby steps.

We want our guests to feel at home—as if they are visiting a second home. Noodles nourish both body and soul, and we hope our guests can experience this inherited philosophy firsthand.

2023

Introduction to the Market

Our first step was to bring authentic Japanese cuisine, crafted with Madeira's local ingredients, to as many people as possible.

Operating without reservations, we adopted a Japanese chaya–style shared seating approach, encouraging short stays and high turnover.

This allowed us to build recognition while managing both production and restaurant operations efficiently.

2024

Transition to a Refined Experience

Within ten months of opening, demand exceeded our capacity to serve walk-in guests while maintaining the meticulous standards of Kappo-style cooking.

We introduced a reservation-based system and created personal dining spaces, allowing guests to relax and enjoy a more elevated experience.

Moving Forward with Intention

We expressed the original vision of the project—"Madeira Meets Japan"—through a special Christmas Thanks course.

As we move ahead, we are ready to strengthen and thoughtfully promote each of the Kirita brands.

With careful planning and a commitment to steady, meaningful growth, we continue to progress—always taking deliberate, well-considered baby steps.

Our noodles are handmade daily by our third-generation noodle master using traditional Japanese techniques passed down for over 70 years. We use only premium ingredients and combine authentic Japanese methods with local Madeiran ingredients for a unique flavor profile.

Niboshi ramen is a traditional Japanese ramen featuring a rich broth made from dried small fish (niboshi). At KIRITA, we prepare our Niboshi ramen using authentic Japanese techniques, creating a deep, umami-rich flavor that represents the essence of traditional Japanese ramen cuisine.

Each ramen type at KIRITA offers a unique flavor profile. Our Miso ramen features a rich, savory broth, while Shoyu ramen has a lighter, soy sauce-based flavor. Shio ramen offers a clean, salt-based taste, and our specialty Niboshi ramen provides a deep, umami-rich flavor from dried fish. Each bowl is carefully crafted to deliver an authentic Japanese dining experience.

Hiyashi means "cold" or "chilled" in Japanese. Hiyashi ramen and Hiyashi udon are refreshing cold noodle dishes, perfect for warm weather. These dishes feature chilled noodles served with fresh vegetables, a tangy dressing, and are a popular summer dish in Japan.

Onigiri is a traditional Japanese rice ball, typically shaped into a triangle or cylinder and wrapped with nori (seaweed). At KIRITA, we offer a variety of onigiri with different fillings such as kombu, negimiso, tsukemono, and more. Each onigiri is handcrafted with care, using premium Japanese rice and authentic ingredients.

Yes, we offer pork options in some of our dishes. However, we also have a wide variety of vegan and vegetarian options available. Please feel free to ask our staff about specific ingredients or dietary restrictions, and we will be happy to accommodate your needs.

The way we balance flavors, the timing of when ingredients are added, and our master's expertise in creating the perfect harmony of tastes are what distinguish each dish. It's the art of Japanese cuisine - using the same ingredients but creating completely different flavor experiences.

Traditional Japanese cuisine is generally not very spicy. Most dishes focus on umami, savory flavors rather than heat. However, at KIRITA, we do offer some dishes with mild to moderate spiciness, such as our Picante Miso. If you prefer milder flavors, we have many options available, and our staff can guide you to dishes that suit your taste preferences.

Our curry has a mild to moderate spiciness level, making it suitable for most people, including children. It contains traditional Japanese curry ingredients such as curry roux, vegetables, and your choice of protein. The curry is rich in flavor with a balanced blend of spices.
